With a squeak of delight, Annie fell on the plateful of lumpy, funny-shaped muffins. "Thank you!" she mumbled through a mouthful of muffin. "These are delicious!"

Lucy and Stephen Hawking
My kids love this delightful, quirky, fact-based science fiction story co-written by theoretical physicist Stephen Hawking and his daughter, Lucy. The muffins are best served with grape soda, which George's neighbor, Annie, gives his pet pig.
BROCCOLI-CHEESE MUFFINS
2 boxes of Jiffy cornbread mix
2 eggs
2/3 cups milk
cooked broccoli (I use about 2/3 of a bag of Steamables but if you're brave, go ahead and dump it all in)
1/2-1 cup shredded extra sharp cheddar cheese
1/2-3/4 cups diced ham (optional)
Preheat the oven to 400 degrees.
Combine the cornbread mix, eggs, milk, cheese, and ham. Cut cooked broccoli into smaller pieces and fold into the mix. (If your kids don't care much for broccoli try cutting them into very small pieces and ramping up the cheddar factor.) Spray regular sized muffin tins with baking spray and fill about 2/3rds full. Optional: sprinkle the tops with shredded cheddar. Bake for 15 minutes.
